Ethos, by renowned Johannesburg restaurateur Chris Tatsakis, is a brand new venue in the heart of Morningside, Johannesburg, steeped in a modern interpretation of the vibrant philosophy and flavours of Mediterranean cuisine.

Featuring a stylish bar, a tapas lounge and a fourteen seat private dining room, Ethos is fit for any occasion, from a sophisticated dinner with a choice from their extensive wine collection, to an executive meeting in their dining room.

“Food has always been much more to the Mediterranean people than just sustenance,” says Chris. “It’s the spirit that defines their romance and the vehicle through which they express their love for the world around them.”

At Ethos, you can expect a variety of Mediterranean meals, ranging from Italian, Greek and Spanish, in both the main restaurant and the tapas bar. Their chef has also created some vegan and vegetarian dishes to delight every appetite.

Of course it goes without saying that they joyfully embrace their South African heritage, which they have achieved by adding South African dry-aged meats to their menu, cooked on open fire using charcoal machines which they have imported from Spain.

Because their chefs have selected only the best suppliers, you can expect Angus and Wagyu beef from Sparta and Woodview farms in the heart of the Free State. Their cuts have been hand selected for marbling, ensuring every bite is filled with flavour. They complement those with local cuts of Karan beef, which they age for exceptional tenderness and flavour, through their own process.

All their ingredients are sourced fresh daily, so you can expect menu changes every few months to tempt you to return often.

Naturally, in a country that produces some of the world’s best wines, their sommelier has enjoyed the privilege of creating a truly notable collection, and embellished it with some of the best international wines.

The tranquil interior design comes from the hands of  Giorgio Tatsakis (, who describes it as “a take on a modernised authentic, Mediterranean style,  conceptualised around the colours and textures of the Mediterranean, using a combination of wood, brass, terrazzo, marble, ceramic tiles and different textiles.

“Ultimately however, it’s about the simple flavours that have been defining the Mediterranean since the beginning of time, and the exquisite dishes that will be with us to the end. That is our Ethos – our philosophy of food,” says Chris.
